Red chilli sauce - 1.5 tablespoon

Crushed ginger and garlic - 2 tablespoon each
Green chilli - 1-2, chopped
Chicken stock/water - 2.5 cups
Water - 1.5 cups
Soya sauce - 2-2.5 tablespoon
Tomato ketchup - 2 tablespoon
Red chilli sauce - 1.5 tablespoon
Vinegar - 1 tablespoon
Pepper powder - 1 tablespoon
Sugar - 1/2 tablespoon
Salt - 1/2 - 1/2 tablespoon
Cornflour - 1.5 tablespoon
Spring onion - 2-3 stalks, chopped (white and greens separate)

DIRECTION:
Combine all of the ingredients in the dough. Dip chicken pieces in egg batter. Heat the oil for deep frying in a pan see note. When the oil is hot, turn down the heat. Add the chicken pieces with oil and turn the heat to low-medium. Fry the chicken pieces until lightly golden color. Make sure you do not fry too long, otherwise the chicken will harden. Keep it aside.
In a wok, heat oil. Fry the crushed ginger and garlic. Add the green pepper and white onions. Stir for a few seconds. Add chicken broth / water. Add all the other ingredients of the sauce, except cornstarch. Boil for 2-3 minutes. Add 3 tablespoons of cornstarch and water to make a thick paste.
Add corn flour pasta to the sauce and give a boil. Add fried chicken pieces and fry for 2-3 minutes until the sauce becomes slightly thick. Serve hot garnished with spring onion greens.
