INGREDIENTS:
1/2 pounds apricots, roughly chopped, pits removed and discarded
1/4 cup sugar
2 Tbsp cider vinegar
2 pounds skinless chicken breasts, cut into 1 to 2-inch pieces Salt
1 Tbsp unsalted butter (can sub olive oil)
3 Tbsp olive oil
1 chopped onion
2 cups chicken stock or broth (use gluten-free stock if you are cooking gluten-free)
1 Tbsp chopped fresh rosemary
1 teaspoon cinnamon
2 teaspoons Tabasco or other hot sauce (you can add more if you like)
and last black pepper
DIRECTION:
Place flour and salt and pepper in a shallow bowl. Lightly coat chicken pieces in seasoned flour, shaking off excess.
1 tablespoon oil in a deep, large, heavy-based saucepan over medium heat. Cook chicken, in batches, for 2-3 minutes each side or until golden. Transfer to a plate. Repeat with remaining chicken and oil. Cover and set aside.
Add onion and garlic to the pan. Cook, stirring occasionally, for 3-4 minutes or until tender. Sprinkle with Moroccan spices like onion and stir until well combined.
Stir in apricot nectar. Bring to boil. Reduce heat to low . Return chicken to skillet. Cover with a lid or two pieces of foil. Cook for 20 minutes. Remove the lid and add the apricots, push them into the sauce. Cook, uncovered, for a further 20-25 minutes or until the chicken is cooked through and the sauce is thickened.
Meanwhile, place couscous in a heatproof bowl. Pour 1 cup boiling water. Cover. Stand for 5 minutes or until water has been absorbed. Stir with a fork to separate grains. Spoon couscous plates. Spoon sauce over chicken and sprinkle with parsley.
