3 cups shredded or diced cooked chicken (slow cook, roast or boil)
1 ½ cup freshly grated Monterey Jack cheese
2 tablespoons water
1 teaspoon of cumin
½ teaspoon of salt
¼ teaspoon chili powder
1 jalapeno pepper, diced (optional)
1 ½ limes

DIRECTION:
Preheat oven to 450 degrees F. In a large bowl, mix the chicken, cheese, water, spices, jalapeno pepper (if using) and juice of 1 lemon.
In a large baking sheet (lined with foil for less mess) lay the tortilla in an even layer. Depending on the size of your baking tray may need to cook these in two batches.
Evenly distribute the chicken mixture on top of tortilla 8 (the top layer should be ½ "tall) and bake until cheese begins to brown, about 12-13 minutes.
Squeeze the lemon and half left on top of the cooked toast and serve hot with sour cream, diced avocado and cilantro leaves.
