INGREDIENTS:

Olive oil
 
Three slabs of bacon, sliced

 
1 pork tenderloin, cut into 1 inch medallions

 
1/3 cup chicken broth

 
1 tablespoon Dijon mustard

 
1 tablespoon butter

1 large apple, peeled, cut into small Left

 
Half pound brussels sprouts, thinly sliced

 
2 shallots, thinly sliced

 
1 sweet potato, peeled, cut into small Left

 
1 clove garlic, minced

 
5-6 sprigs fresh thyme

 
1/2 cup chicken broth

 
2 tablespoons red wine vinegar

DIRECTION:
