Chicken fried rice tastes best when cooked the remaining rice. Makes 3 servings of chicken fried rice, or 4-6 part of the meal.INGREDIENTS:
4 cups cold cooked rice
8 ounces cooked chicken chopped
2 eggs
1/2 cup green peas
1 medium onion, diced
1 green onion, diced
Seasonings (add according to taste):
Light Soy Sauce
Oyster sauce
Salt according to taste
Pepper according to taste
Oil for stir-frying.
DIRECTION:
Beat the eggs lightly with chopsticks, add a pinch of salt (Add a bit of oyster sauce if necessary).
Slice the chicken and chop the onions and green onions.
Heat wok and add oil. When oil is ready, pour half of the egg mixture into the wok and cook over medium heat, turning once. Prepare the second half of the same. Cut the egg into thin strips, and save for later. Fry onion over high heat for a few minutes, remove and set aside. Do the same for the green peas.
Add oil, turn the heat down to medium and stir fry rice. Add soy sauce, salt , pepper and oyster sauce. Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with egg strips on top and green onions as a garnish. Also, you can mix the green onion and egg in the other ingredients.
