INGREDIENTS:
2 tablespoons olive oil
2 cloves garlic, minced
1/2 cup chopped yellow onion
1 pound ground chicken
1/2 teaspoon salt tea
1 tablespoon plus 1/2 teaspoon cumin
4 teaspoons pepper
1 green pepper, chopped
1/2 jalapeno, minced
28 ounce can crushed tomatoes
1 cup chicken broth
Beans 14 oz kidney, rinsed and drained
(Filling of choice: avocado, cheese, cilantro, sour cream, chives)
DIRECTION:
In a large saucepan, heat oil over medium heat.
Add onion and garlic and fry for 2-3 minutes not until fragrant.
Add chicken milled and cook, stirring occasionally, about 5-6 minutes. Sprinkle with salt, cumin and chili powder and mix green and jalapeno peppers.
Pour the crushed tomatoes, chicken broth and beans.
Stir well and bring to a boil. Reduce heat and simmer for 15-20 minutes. Top with your favorite toppings and enjoy!
